Classic Black Beans
1 (16- oz.) package dry black beans
8 cups water
3/4 tsp. salt or to taste
1/2 cup crumbled cotija cheese

Prep: 10 minutes, Soak: 1 hour to overnight
Cook: 1½ to 2 hours, Serves: 12

1. Cover beans with water and let stand overnight. (Or quick soak by bringing water to a boil, then remove from heat and let stand for 1 hour.)

2. Bring to a boil; reduce heat and simmer with lid ajar for 1½ to 2 hours or until beans are tender.

3. Season with salt and mash lightly. (Beans will thicken as they cool.) Top with crumbled cheese.
