Hot Sausage and Zucchini Skillet
Hot Sausage and Zucchini Skillet
1 (16- oz.) package Evergood Louisiana Brand Hot Link Sausage
1/2 of a thinly slivered red onion
4 zucchini, sliced 1/4 -inch thick
1/2 lb. dry rigatoni pasta (about 4 cups cooked)
1/3 cup white wine vinegar
3 tbsp. Dijon mustard
1 tbsp. chopped fresh oregano

Prep: 5 minutes, Cook: about 10 minutes, Serves: 4

1. Slice sausages and place in a large skillet with onion. Cook over medium-high heat for about 5 minutes or until onion is soft.

2. Stir in zucchini, pasta, vinegar and mustard. Cook, stirring frequently, until zucchini is tender. Top with oregano before serving.

Riesling - The sweetness in this wine helps tame the hot links, while the acidity pairs with the vinegar and Dijon.
