Grilled Beef and Avocado Melts
1 lb. Raley's Beef London broil California raised USDA choice
2 tsp. Mexican seasoning blend
4 slices New York Texas Toast (in our frozen foods section) thawed and lightly toasted
1 large avocado peeled, pitted and mashed
8 slices yellow onion (very thin)
8 slices tomato
4 slices Monterey Jack cheese
Prep time: 15 minutes
Cook time: 15 to 20 minutes

Sprinkle London broil on both sides with Mexican seasoning. Grill over medium
heat for about 5 minutes on each side or until beef is cooked to your liking.
Remove from grill and set aside for 5 minutes, then thinly slice. Place toast on 2
large sheets of foil. Top with equal amounts of avocado, beef and any juices.
Top with onion, tomato and cheese (in that order). Return to grill for 5 minutes
more to melt cheese.

Makes 4 servings.
