Blueberry Vinaigrette
Blueberry Vinaigrette
Blueberry Vinegar:
1/4 cup frozen blueberries, thawed
1/4 cup champagne vinegar

Blueberry Vinaigrette:
1/3 cup olive oil
2 tbsp. Blueberry Vinegar (above)
Salt and freshly ground pepper to taste

Prep: 10 minutes, Makes: about 1/2 cup dressing

1. To make Blueberry Vinegar, puree blueberries and champagne vinegar in a food processor or blender. This will yield about 1/3 cup.

2. To make Blueberry Vinaigrette, whisk together olive oil and 2 tbsp. blueberry vinegar; season to taste with salt and pepper. Delicious tossed with mixed baby greens, fresh quartered figs and toasted nuts.
