Maple Chipotle Pear Topping
1 ripe pear, cored and cut into bite-size slices (try 1/2 red pear and 1/2 green pear for added color)
1 tbsp. minced red onion
1 tbsp. chopped fresh cilantro
1 tbsp. lime juice
1 tbsp. pure maple syrup
1/2 to 1 tsp. adobo sauce from canned chipotle peppers
Grilled or baked pork, salmon or chicken

This slightly spicy, slightly sweet topping is great over grilled pork, chicken or salmon.

Prep: 10 minutes, Serves: 2

1. Stir together all ingredients except meat in a small bowl.

2. Serve over grilled pork, chicken or salmon.
