Broccoli and Cheese Frittata
Broccoli and Cheese Frittata
2 tbsp. butter
1/2 cup chopped onion
1 cups coarsely chopped broccoli
1/2 cup chopped red bell pepper
8 eggs
3/4 tsp. garlic salt
3/4 tsp. thyme
1/4 tsp. pepper
1/2 cup shredded medium Cheddar cheese
1/2 cup shredded Havarti cheese

Prep: 20 minutes, Cook: 20 minutes, Serves: 4 to 6

1. Preheat oven to 400°F.

2. Melt butter in a medium ovenproof skillet. Add onion and cook for 5 minutes or until softened. Add broccoli and red pepper; cook and stir for 5 minutes more.

3. Beat together eggs, salt, thyme and pepper and pour into skillet. Cook for 1 minute, then stir and cook for 1 minute more. Lightly stir in cheese.

4. Place skillet in oven and bake for 10 to 15 minutes or until center is set.
