Roasted Cauliflower au Gratin
Roasted Cauliflower au Gratin
1 large head cauliflower
2 tbsp. extra virgin olive oil
2 cloves garlic, minced
1/2 tsp. sage
1/2 tsp. thyme
1/4 tsp. salt
1/4 tsp. white pepper
1 tbsp. butter
1/2 cup panko breadcrumbs
2 tbsp. freshly grated Parmesan cheese

Prep: 10 minutes, Cook: 20 to 25 minutes, Serves: 6

Preheat oven to 400°F and spray a shallow baking dish with nonstick cooking spray. Cut cauliflower into large chunks. Stir together oil, garlic and seasonings in a large bowl; add cauliflower and toss well to coat. Place in prepared dish. Bake uncovered for 15 minutes, stirring once halfway through the cook time. Meanwhile, melt butter in a small saucepan and add breadcrumbs. Cook for about 2 minutes or until golden brown. Sprinkle breadcrumbs and Parmesan over cauliflower; bake for 5 to 7 minutes more or until golden brown.
