Roasted Garlic Mashed Potatoes

Roasted Garlic Mashed Potatoes
5 lbs. russet or gold flesh potatoes cubed
1½ cups sour cream
3/4 cup green onions thinly sliced
1/2 cup milk
1/4 cup butter
3 to 4 tbsp. minced Christopher Ranch Roasted Garlic
Salt and pepper to taste
Prep time: 15 minutes
Cook time: 20 minutes

Cook potatoes in boiling water for 20 minutes or until soft when pierced with a
knife; drain well. Transfer to a large bowl and mash until smooth. Stir in
remaining ingredients, then season with salt and pepper.

Add a few Knorr Boullion cubes to the cooking water for extra flavor

Makes 12 servings.
