Mushroom Fajita Quesadillas

Mushroom Fajita Quesadillas
1 tbsp. vegetable oil
1/2 of a 12- oz. container Raley's Fajita Vegetable Mix (in or Produce Dept.)
2 cups sliced mushrooms
2 cups shredded rotisserie chicken
2 tsp. Morton & Bassett Mexican Seasoning
1 (8- oz.) package shredded Mexican blend cheese
4 burrito size flour tortillas

Prep: 5 minutes, Cook: about 15 minutes, Serves: 4

1. Heat oil in a medium skillet over medium-high heat. Add fajita mix and mushrooms; cook for 5 minutes over medium-high heat, stirring frequently. Stir in chicken and seasoning.

2. Place equal amounts of cheese and fajita mixture on half of each tortilla. Fold in half and cook in a large skillet for about 3 to 5 minutes on each side or until tortilla is crisp and cheese is melted.
