Pasta Carbonara

Pasta Carbonara
1½ cups diced ham
1 cup frozen peas, thawed
1/2 cup chopped red bell pepper
1 tbsp. olive oil
1 clove garlic, minced
1/2 lb. fettuccine, cooked according to package directions
1/2 cup egg substitute
1/2 cup fat-free half & half
1/2 cup shredded Parmesan cheese

Prep: 10 minutes, Cook: 30 minutes, Serves: 4 to 6

1. Saute ham, peas, bell pepper, olive oil and garlic in a large saucepan over medium heat for 5 minutes.

2. Cook fettuccine according to package directions.

3. Stir into saucepan with egg substitute and half & half. Continue to cook, stirring frequently, for another 3 to 4 minutes. Season to taste with salt and pepper and top with Parmesan cheese.
