Lemon Herb Pork Chops
1/3 cup olive oil
1/3 cup lemon juice
1 tsp. salt
1 tsp. pepper
1 tsp. dried oregano
4 boneless Raley's pork chops
1 large white onion, sliced

Prep: 5 minutes, Marinate: 2 to 3 hours
Cook: 30 minutes, Serves: 4

1. Whisk together oil, lemon juice, salt, pepper and dried oregano in a baking dish. Add chops and onion; turn to coat.

2. Cover and refrigerate for 2 to 3 hours, turning several times while marinating.

3. Bake at 350°F for 30 minutes or until pork reaches an internal temperature of 145°F. Great with mashed potatoes.
