California Waldorf Salad

California Waldorf Salad
4 Granny Smith apples pared and cubed
1 cup celery sliced
1 cup walnuts toasted
1/2 cup dried cranberries
3 tbsp. lemon juice
1 tbsp. mint finely chopped
1 tbsp. sugar
1 tsp. oil
1/2 tsp. grated lemon zest
1/2 tsp. salt
Combine 4 pared and cubed Granny Smith apples, 1 cup each: sliced celery
and toasted walnuts and 1/2 cup dried cranberries in a medium bowl. Stir
together 3 tbsp. lemon juice, 1 tbsp. each: finely chopped mint and sugar, 1 tsp.
oil and 1/2 tsp. each: grated lemon zest and salt in a small bowl. Toss with apple
mixture and serve.

Makes 8 servings.
