Spicy Sausage and Potatoes

Spicy Sausage and Potatoes
1 lb. hot Italian sausage
2 lbs. russet potatoes, cut into 1/2-inch cubes
1 large onion, chopped
2 tsp. dried basil
1/2 tsp. salt or to taste
Salt and freshly ground pepper to taste

Hot sausage is traditional in this recipe, but if you're not fond of spicy foods, substitute sweet or mild Italian sausage.

Prep: 10 minutes, Cook: 50 minutes, Serves: 8

1. Crumble sausage into a large nonstick skillet. Cook, stirring frequently, for 10 minutes.

2. Remove from skillet with a slotted spoon and keep warm.

3. Drain fat from skillet and add potatoes and onion; cook over medium-high heat for 20 minutes, stirring frequently.

4. Stir in sausage, basil and salt; cook over medium-low heat for 20 minutes more or until potatoes are cooked through.
