Sherried Mushrooms

Sherried Mushrooms
1 tbsp. butter
1/2 cup shallots sliced
1/2 lb. mushrooms sliced
2 tsp. Tony Chacheres Creole Seasoning
1/4 tsp. dried thyme
1/4 cup sherry

Melt 1 tbsp. butter in a large skillet over medium heat; add 1/2 cup sliced shallots and cook for 5 minutes. Stir in 1/2 lb. sliced mushrooms, 2 tsp. Tony Chacheres Creole Seasoning and 1/4 tsp. dried thyme; cook, stirring frequently, for 5 minutes. Stir in 1/4 cup sherry and cook for a few minutes more. Serve as a side dish or over steak or chicken. Makes about 1½ cups.

Served on 2/24/09 with Limoncello Chicken. Delish - great flavor. Easy and quick. Didn't have shallot so didn't add and didn't use butter - used spray.
