Spicy Slow Cooked Meatloaf

Spicy Slow Cooked Meatloaf
3/4 cup plus 2 tbsp. California Fire-Roasted Salsa divided
3 tbsp. tomato paste
1 lb. ground round or lean ground beef
1 (4- oz.) can diced green chiles
1 egg
1/2 cup tortilla chips (slightly heaping) crushed
1/2 cup onion chopped
2½ tsp. chili powder
1 tsp. garlic salt
3/4 tsp. each: ground cumin and dried oregano

Prep time: 15 minutes, Cook time: 2 to 4 hours

Stir together 3/4 cup salsa and tomato paste in a small bowl; set aside. Mix remaining salsa with remaining ingredients in a medium bowl until well blended (it’s easiest to use your hands). Shape into a ball and place in a slow cooker; top with salsa mixture. Cook on HIGH for 2 hours or LOW for 4 hours. Carefully remove from slow cooker and cut into wedges. Makes 4 to 6 servings.

Another winner from the current Raley's magazine--I made it with ground turkey and a fresh jalapeno (I didn't have the green chiles). Extremely moist and flavorful.
