White Bean and Tomato Soup

White Bean and Tomato Soup
2 cloves garlic minced
1 tbsp. olive oil
2 (15- oz.) can white beans
1 (14.5- oz.) can Italian style diced tomatoes
1 tsp. dried oregano leaves

Sauté 2 cloves minced garlic in 1 tbsp. olive oil over medium heat in a medium saucepan until fragrant. Add 1 (15-oz.) can white beans and mash coarsely. Stir in 1 additional can white beans, 1 (14.5-oz.) can Italian style diced tomatoes and 1 tsp. dried oregano leaves. Simmer, partially covered, for 10 minutes. Season to taste with salt and pepper. Top with shaved Parmesan cheese, if you like. Makes 4 servings.

I am a guy and this is the easiest soup I have ever made. So easy to increase the amounts if you have a larger family. I did find that bringing it to a boil and them turning it to simmer was best for me. I highly recommend this for anyone. Dave

I have made this recipe many times and if I have any left over ham or veggies, I will toss them in and it is easy, tasty, and comes together quickly. Serve with a good crusty bed, a green salad and dinner is served.
