Creamy Avocado Dressing

Creamy Avocado Dressing
1 ripe California avocado, peeled and pitted
1/4 cup fresh cilantro leaves (not packed)
1/4 cup extra virgin olive oil
1/4 cup cider vinegar
1/4 cup orange juice
3/4 tsp. sugar
1 clove garlic, chopped
Salt and pepper to taste

Prep: 5 minutes, Makes: about 1 cup

1. Puree all ingredients except seasonings in a blender or food processor until smooth.

2. Season to taste with salt and freshly ground pepper. Serve over your favorite salad.

There is waaaaaaayyyyy too much cider vinegar in this recipe. That's all I could taste, even tried adding 2 more avocados, but the only thing that changed was the texture.
