Dilly Red Potato Salad

Dilly Red Potato Salad
1/2 cup light sour cream
2 tbsp. chopped fresh dill
1 tbsp. rice vinegar (not seasoned)
Salt and pepper, to taste
1/4 cup sliced green onions
1 lb. cubed red potatoes, cooked and cooled
1 hard boiled egg, chopped

Stir together sour cream, dill and rice vinegar in a small bowl; season to taste with salt and pepper. Gently stir into cooked and cooled potatoes, green onions and egg. Serve immediately or chill until ready to serve.

Makes 4 servings.

This salas is on me of the best potatoe salads I have ever tasted. Nothing in it overpowers the other ingredients
