Picnic Potato Salad

Picnic Potato Salad
1 lb. very small red potatoes
1 tbsp. white wine vinegar
1/2 tsp. each: salt and pepper freshly ground
3 tbsp. celery minced
2 tbsp. red onion minced
1 tbsp. olive oil
1/4 cup Fresh Gourmet Crispy Onions
2 tbsp. bacon pieces
Lettuce leaves (optional)

Prep time: 15 minutes
Cook time: about 10 minutes

Steam potatoes for 10 minutes or until tender; cool slightly and cut into bite-size pieces. Sprinkle with vinegar, salt and pepper while still warm; set aside to cool. Stir in celery, onion and oil. (Add additional stir-ins now, if you like.) Pack crispy onions and bacon in a resealable bag; stir into salad just before serving. Scoop individual portions onto a lettuce leaf for mess-free eating, if you like.

Makes 4 servings.
