Bermuda Onion Marmalade

Bermuda Onion Marmalade
1/4 cup olive oil
1 lb. sweet onions, cut into 1/4 -inch dice
3 cloves garlic, minced
1/4 cup red wine
1/4 cup balsamic vinegar
1/4 cup brown sugar
2 tbsp. tomato paste
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. nutmeg
Salt and freshly ground pepper to taste

This sweet and tangy sauce is packed with flavor! Delicious over chicken or pork.

Prep: 15 minutes, Cook: 16 minutes, Makes: about 1½ cups

1. Heat oil in a medium skillet over medium-high heat. Add onions and garlic; sauté for 10 minutes or until onions just begin to brown. Add wine, vinegar and brown sugar and cook for 5 minutes, stirring frequently.

2. Stir in tomato paste, ginger, cloves and nutmeg. Reduce heat; cook and stir over low heat for 1 minute or until marmalade is thick. Season with salt and pepper.
