Irish Corned Beef and Cabbage Salad

Irish Corned Beef and Cabbage Salad
3 cups shredded coleslaw mix (green and purple cabbage and carrots)
1/2 cup small bite-size pieces corned beef (in our Deli)
1/2 cup very small cubes Kerrygold Dubliner or Blarney Castle Cheese (in our Deli)
1/4 cup sliced green onions
1/4 cup Girard's Champagne Vinaigrette
12 tiny grape tomatoes, quartered (or 6 larger grape tomatoes, cut into small wedges)

A fun, fresh take on the St. Patrick's Day favorite! Beautiful when served in a purple cabbage leaf.

Prep: 15 minutes, Serves: 2

Toss all ingredients together in a medium bowl. Serve immediately.

Recipe may be doubled.
