Herbed Leg of Lamb

Herbed Leg of Lamb
1 whole or half leg of lamb (see note)
1/2 cup undiluted orange juice concentrate, thawed
4 cloves garlic, minced
1 tbsp. chopped fresh rosemary
1 tbsp. chopped fresh thyme
1 tbsp. chopped fresh mint
1/2 tsp. salt
1/2 tsp. coarsely ground pepper

Serves: 12

1. Preheat oven to 325°F.

2. Rinse lamb and pat dry; place in a large, shallow baking dish.

3. Combine remaining ingredients in a small bowl. Brush some of the mixture over the lamb before cooking and several times during cook time.

4. Roast until lamb reaches desired doneness: 10 to 11 minutes per pound for rare, 12 to 13 minutes per pound for medium and 18 to 20 minutes per pound for well. Let stand for 10 minutes before slicing.

Note: A whole leg of lamb weighs approximately 8 lb. and serves 12.
