Chocolate Mint  Brownie Sundaes

Chocolate Mint Brownie Sundaes
1/4 cup butter
1 oz. unsweetened chocolate
1/2 cup sugar
1 egg
1/3 cup flour
1/4 tsp. peppermint extract
24 lined mini muffin cups
1½ cups softened vanilla ice cream
¼ tsp. peppermint extract
candy canes or peppermint candies crushed

Prep: 10 minutes, Cook: 15 minutes, Makes: 24 tiny desserts

Preheat oven to 350°F. Melt 1/4 cup butter and 1 oz. unsweetened chocolate in a small saucepan. Remove from heat and let cool slightly, then beat in 1/2 cup sugar and 1 egg. Add 1/3 cup flour and 1/4 tsp. peppermint extract and spoon into 24 lined mini muffin cups. Bake for 10 minutes, then let cool. Stir together 1½ cups softened vanilla ice cream and ¼ tsp. peppermint extract. Spoon into cups and sprinkle with crushed candy canes or peppermint candies. Freeze until ready to serve
