Parmesan Crusted Italian Chicken Sandwiches

Parmesan Crusted Italian Chicken Sandwiches
2/3 cup rotisserie chicken, shredded
2/3 cup Raley's Shredded Italian Cheese Blend
1/4 cup Nob Hill Trading Co. Italian Spiced Blend Olives (olives, red peppers and pepperoncini), drained and sliced or chopped
3 tbsp. Mezzetta Julienne Cut Sun-Ripened Dried Tomatoes, drained and minced
1/4 cup Raley's Shredded Parmesan Cheese, divided
4 slices sourdough bread

Prep: 10 minutes, Cook: 10 minutes, Serves: 2

1. Stir together chicken, cheese, olive mixture and tomatoes in a medium bowl.

2. Spray a large skillet with nonstick cooking spray and place over medium-high heat. Divide Parmesan in a large nonstick skillet in 4 small piles (about 1 tbsp. each), spreading slightly. Top with 4 bread slices.

3. Pile chicken mixture onto half the bread and cook for a minute or two or until cheese is crusty. Close sandwiches and reduce heat to medium. Cook for a few minutes more on each side or until bread is golden brown and filling is hot.
