White Bean Crostini

White Bean Crostini
36 baguette slices
3 tbsp. extra virgin olive oil, divided
1 (15- oz.) can cannelini beans, rinsed and drained
1 tsp. garlic, minced
1 tsp. lemon juice
1/4 tsp. sea salt
Fresh rosemary or basil

Prep: 10 minutes, Cook: 5 minutes, Makes: 36 appetizers

1. Preheat oven to 425°F. Brush baguette slices with 2 tbsp. olive oil and place on a baking sheet; bake for 5 minutes to crisp.

2. Stir together beans, remaining oil, garlic, lemon juice and salt. Coarsely mash or puree, then stir in chopped fresh rosemary or basil to taste. Spoon onto baguette crisps and top with additional herbs, if you like.

So easy and inexpensive, but pretty darn elegant. Brought this to a party and it was a huge hit, directed everyone back to this website for the recipe.
