Mom's Meatloaf
1 lb. ground round
2/3 cup seasoned bread crumbs
1/4 cup marinara sauce
1/3 cup shredded Parmesan cheese
1/4 cup grated carrot
1/4 cup minced green bell pepper
1 tsp. Italian seasoning
1 egg
Prep: 10 minutes, Cook: 50 to 55 minutes, Serves: 4 to 6

1. Preheat oven to 375°F and spray a shallow baking dish with
nonstick cooking spray.

2. Stir together all ingredients until well mixed and shape
into a rounded loaf.

3.Place in prepared dish and bake for 50 to 55
minutes or until beef is cooked to 160°F internally.

My family absolutely LOVE this meal. I like to add a tablespoon of chopped onion and a T. of minced garlic. Delicious!
