Berry Basket Freezer Jam

Berry Basket Freezer Jam
2 (6- oz.) containers fresh raspberries
2 (6- oz.) containers fresh blueberries
1 (16- oz.) container fresh strawberries, hulled and quartered
1 cup sugar
1/2 cup orange juice
2 tbsp. fresh lemon juice

Prep: 10 minutes, Cook: 1½ hours
Makes: about 3 cups or 12 servings

1. Rinse berries and place in a heavy pan with sugar and juices. (Pan may be very full, but mixture will cook down quickly.) Bring to a boil; reduce heat slightly.

2. Simmer, uncovered, for 1½ hours or until mixture is very thick and coats a spoon. When mixture starts to thicken, reduce heat to low and stir often to avoid scorching.

3. Let cool, then spoon into clean containers, filling to within 1/4 inch of the tops. Cover tightly and freeze until ready to use, up to 1 year.

Serve on toast, muffins or scones, or use as a topping for ice cream or cheesecake.
