Chipotle Beef Tostadas

Chipotle Beef Tostadas
1 (7- oz.) package tostada crowns
4 cups shredded romaine lettuce
2 cups bite-size strips cooked Chipotle Beef (see recipe link below in Directions)
1/2 cup chopped red onion
1/2 cup corn
1/2 cup shredded pepper Jack cheese
1 large tomato, diced
1 (2.2- oz.) can sliced ripe olives, drained
1/4 cup sour cream
1 tsp. adobo sauce (from canned chipotle peppers)
1/2 cup Fire-Roasted Salsa (see recipe link below in Directions)

Prep: 15 minutes, Cook: 5 minutes, Serves: 4

1. Heat tostada crowns according to package directions; let cool.

2. Place equal amounts of lettuce, Chipotle Beef, onion, corn, cheese, tomatoes and olives inside each crown.

3. In a small bowl, prepare chipotle cream by stirring together sour cream and adobo sauce.

4. Top each serving with a dollop of chipotle cream, Fire-Roasted Salsa and guacamole. Serve with remaining salsa.
