Greek Chicken Salad

Greek Chicken Salad
1 lb. boneless, skinless chicken breasts pounded to 1/2-inch thick
Salt and pepper to taste
2 cups romaine lettuce chopped
1/2 cup tomatoes chopped
1/2 cup red onion julienne sliced
1/2 cup crumbled garlic and herb feta cheese
1/4 cup kalamata olives quartered
1/4 cup extra virgin olive oil
3 tbsp. fresh lemon juice
1 tbsp. sugar
1/2 tsp. salt
1 clove garlic minced
Pita bread (optional)
Prep time: 15 minutes, Cook time: 10 minutes

Season chicken with salt and pepper. Cook on a lightly oiled grill over medium-high heat for 3 to 5 minutes per side or until cooked through to an internal temperature of 165°F. Remove from grill and cut into bite-size strips. Place in a bowl with lettuce, tomatoes, onion, feta and olives. Drizzle with vinaigrette and toss. If desired, spoon into pita bread halves or serve with rolls.

Lemon Vinaigrette: Whisk together 1/4 cup extra virgin olive oil, 3 tbsp. fresh lemon juice, 1 tbsp. sugar, 1/2 tsp. salt and 1 clove minced garlic. Season to taste with freshly ground pepper.

Makes 6 servings.
