Beef Satay with Peanut Dipping Sauce

Beef Satay with Peanut Dipping Sauce
2 lb. Raley's flank steak
Unseasoned meat tenderizer
3/4 cup teriyaki sauce
2 tbsp. chopped onion
2 cloves garlic, minced
1/2 tbsp. peanut oil
3/4 cup crunchy peanut butter
3/4 cup light coconut milk
1½ tbsp. soy sauce
1½ tbsp. lemon juice
1/2 tsp. crushed red pepper
1/2 tsp. brown sugar

Prep: 20 minutes, Marinate: several hours or overnight
Cook: 20 minutes, Serves: 6

1. Sprinkle meat tenderizer liberally over both sides of the beef and poke the entire surface with a fork. Holding the knife at an angle, slice beef into thin strips.

2. Place in a resealable plastic bag with teriyaki sauce and seal; let marinate in the refrigerator several hours or overnight. For peanut sauce, sauté onion and garlic in peanut oil for 5 to 10 minutes or until soft. Let cool slightly and stir in remaining ingredients.

3. To cook beef, thread onto skewers and grill over medium heat for about 5 minutes per side. Serve with peanut sauce.
