Garlic and Herb Grilled Lamb
Ingredients
1/3 cup extra virgin olive oil
1/3 cup lemon juice
4 cloves garlic
1½ tbsp. chopped fresh oregano
1½ tbsp. chopped fresh rosemary
3/4 tsp. sugar
3/4 tsp. salt
1/2 tsp. coarse black pepper
2½ to 3 lb. boneless leg of lamb
1 tbsp. balsamic vinegar
1 cup small cherry tomatoes, halved
Directions

Prep: 15 minutes, Marinate: Several hours or overnight
Cook: 10 to 20 minutes, Serves: 4

1. Whisk together oil, lemon juice, garlic, herbs, sugar, salt and pepper in a medium bowl. Set aside 3 tbsp. mixture; pour remainder into a resealable bag.

2. Trim skin and large sections of fat away from lamb; cut meat into 3/4-inch cubes. Add meat to marinade; seal bag and refrigerate for several hours or overnight.

3. Thread meat onto skewers; grill over medium heat for 10 to 15 minutes, turning and brushing with marinade several times.

4. Whisk vinegar into reserved marinade; stir into tomatoes, then pour over meat.
