Sweet Potato Fries with Cranberry Ketchup

Sweet Potato Fries with Cranberry Ketchup
2 lbs. sweet potatoes or yams
1 tbsp. vegetable oil
Salt to taste
1/2 cup ketchup
1/2 cup whole berry cranberry sauce

Prep: 20 minutes, Cook: 30 minutes, Serves: 12

1. Preheat oven to 425°F and spray a large baking sheet with nonstick cooking spray.

2. Peel potatoes or yams and cut into French fry size sticks. Toss with vegetable oil in a large bowl and spread in a single layer on prepared baking sheet. Bake for 30 minutes or until golden brown, stirring occasionally. Season with salt to taste and serve with Cranberry Ketchup.

2. To prepare Cranberry Ketchup, stir together ketchup and cranberry sauce.
