Russian Holiday Cookies

Russian Holiday Cookies
1/2 cup Island of the Moon Honey
1/3 cup Spectrum Organic Coconut Oil
1 tsp. Simply Organic Vanilla Extract
1 egg
2 cups Bob's Red Mill Gluten Free All Purpose Baking Flour
All Purpose Baking Flour
1½ tbsp. poppy seeds
1 tsp. lemon peel grated
1/2 tsp. Bob's Red Mill Xanthan Gum
1/2 tsp. baking soda
1/4 tsp. sea salt
1/4 cup Crofter's Organic Super Fruit Spread
Powdered sugar for dusting (optional)

Prep: 15 minutes  Chill: 30 minutes  Cook: about 10 minutes 
Cool: 5 minutes  Makes: 18

1. Preheat oven to 375°F and lightly spray two baking sheets with nonstick cooking spray.

2. Stir together honey, oil, vanilla and egg in large bowl of an electric mixer. Beat on high for 2 to 3 minutes, scraping bowl occasionally. Add remaining ingredients except super fruit spread; mix until combined. Cover and refrigerate for 30 minutes.

3. Form into 18 (1-inch) balls and place on prepared baking sheets. Flatten slightly and make a small indentation in the middle of each cookie. Fill each with about 1/2 tsp. spread.

4. Bake for about 10 minutes or until cookies are lightly browned. Dust with powdered sugar, if you like.

5. Let cool for 5 minutes before removing to wire racks to cool completely.
