Ravioli with Fresh Tomato Sauce

Ravioli with Fresh Tomato Sauce
Ingredients
1/2 ea onion peeled and finely chopped
2 cloves small garlic minced
1-1/2 tbsp. butter
1-1/2 lb. ripe tomatoes stems removed
1/4 tsp. salt to taste
Freshly ground pepper
2 tbsp. fresh basil snipped
1 (9- oz.) package Carb Smart Spinach and Cheese Ravioli or try Monterey Pasta Company 5-Cheese Tortelloni cooked
Parmesan cheese Freshly shredded
Directions
Prep time: 15 minutes, Cook time: 20 minutes

Sauté onion and garlic in butter over medium heat for 8 to 10 minutes or until onion is very soft, stirring occasionally. Meanwhile, cut tomatoes in half and squeeze out seeds, then coarsely chop. Add to skillet with onion and cook for 5 to 7 minutes more or until most of the excess liquid has evaporated. Season to taste with salt and pepper, then stir in basil. Serve sauce over hot cooked ravioli with Parmesan cheese.

Makes 4 servings.
