Tilapia with Tomatoes and Olives

Tilapia with Tomatoes and Olives
1 tbsp. extra virgin olive oil
1/2 medium onion peeled and diced
1 cup tomatoes diced
1/2 cup sliced ripe olives
1/2 cup chicken broth
1/4 cup white wine (may substitute chicken broth)
1 tsp. oregano or marjoram
1/2 tsp. garlic salt
garlic pepper
1 lb. tilapia fillets, or any other firm white fish
Prep time: 10 minutes, Cook time: 20 minutes

Cook onion in oil in a medium skillet for about 10 minutes or until soft. Add tomatoes, olives, broth, wine and seasonings; cook for 5 minutes more. Place fish in the skillet, covering with some of the vegetable mixture. Cook, covered, until fish reaches an internal temperature of 150°F and flakes easily when tested with a fork, about 5 minutes. Loved this easy healthy fish dinner. I used fresh tilapia instead of frozen. I prefer fresh. I also added cilantro as an accent when serving. Next time I will serve with a mexican rice that is found near the meat case instead of Spanish rice.
