Peanut Butter Banana Chip Breakfast Bars

Peanut Butter Banana Chip Breakfast Bars
2 cups rolled oats (bulk bin #610)
3/4 cup brown sugar
3/4 cup peanut butter
1/3 cup Smart Balance Buttery Spread or butter
2 large eggs
1 tsp. vanilla extract
2/3 cup banana chips (bulk bin #644)

Prep: 15 minutes, Cook: 20 to 25 minutes, Makes: 10

1. Preheat oven to 375°F and spray an 8-inch square baking dish with nonstick cooking spray.

2. Stir together oats and brown sugar in a large mixing bowl. Add peanut butter, buttery spread, eggs and vanilla; stir until well mixed.

3. Spread mixture evenly into prepared pan. Sprinkle with banana chips and press into the surface. Bake for 20 to 25 minutes or until firm when pressed on the surface. 

4. Let cool and cut into squares. Wrap individually in plastic wrap. May be frozen.
