Carrot Sandwich Cookies

Carrot Sandwich Cookies
1/3 cup Smart Balance Buttery Spread or butter
1/4 cup brown sugar
1/4 cup sugar
1 ea egg
3/4 tsp. imitation maple flavor
1¼ cups whole wheat pastry flour (Natural Foods Dept. bulk bin #626)
1/2 tsp. baking soda
1/2 tsp. salt
1 cup carrots
1/2 cup walnuts (Natural Foods Dept. bulk bin #651)
6 oz. cream cheese
1½ tbsp. honey

Prep: 15 minutes, Cook: 10 to 12 minutes, Makes: 8

1. Preheat oven to 375°F and spray cookie sheets with nonstick cooking spray.

2. Beat together buttery spread, sugars, egg and 1/2 tsp. maple flavor until creamy. Add flour, baking soda and salt; stir until well blended.

3. Stir in carrots and walnuts. Drop batter by tablespoons 2 inches apart on prepared cookie sheets, flattening slightly. You should have about 16 cookies.

4. Bake for 10 to 12 minutes or until lightly browned and springy to the touch; let cool. Blend cream cheese with honey and remaining 1/4 tsp. maple flavor.

5. Spread equal amounts of filling onto 8 cookies; top with remaining cookies. Wrap individually and store in the refrigerator for up to 4 days.
