Tilapia with Creamy Pear Vinaigrette

Tilapia with Creamy Pear Vinaigrette
3 pear halves, drained
4 tbsp. extra virgin olive oil, divided
3 tbsp. white wine vinegar
1 tsp. spicy brown mustard
1/4 tsp. salt
2 (12- oz.) packages Full Circle Organic Tilapia Fillets, thawed
6 cups spring mix

Prep: 5 minutes, Cook: 10 minutes, Serves: 4

1. Puree pears, 3 tbsp. olive oil, vinegar, mustard and salt in a blender orfood processor. Chill until ready to serve.

2. Pat tilapia between paper towels to remove excess moisture. Heat remaining olive oil in a large nonstick skillet over medium-high heat. Add tilapia and cook for about 2 minutes on each side or fish is golden brownand flakes easily with a fork.

3. Toss spring mix with a little of the dressing. Place on 4 plates and top withfish. Drizzle with remaining dressing.

This is a delicious, light, super easy and FAST summer dinner. I added sliced tomatoes, blackberries, oranges, yellow pepper and strawberries to the spring mix to have more veggies. It was a HUGE hit!!
