Ginger Carrot Soup

Ginger Carrot Soup
2 tbsp. butter
3/4 cup chopped onion
4 cups homemade or Kitchen Basics Chicken Stock
1 lb. carrots, peeled and sliced
1 tbsp. minced fresh ginger or 3/4 tsp. ground ginger
3/4 tsp. garlic salt
freshly ground pepper to taste
fresh chives, snipped

Prep: 20 minutes, Cook: 40 minutes, Serves: 4

Melt butter in a medium saucepan. Add onion and cook for 10 minutes to soften. Add stock, carrots, ginger and garlic salt and bring mixture to a boil. Reduce heat and simmer, covered, for 30 minutes. Let cool slightly and puree in a blender or food processor. Season with pepper and chives.

Variation: If desired, add cooked prawns just before serving.
