Zucchini Walnut Salad

Zucchini Walnut Salad
1 tbsp. each: walnut or extra virgin olive oil and sherry vinegar
1 tsp. each: Dijon mustard, sugar
1/4 tsp. garlic salt
4 medium zucchini
1/4 cup halved grape tomatoes
1 small shallot
1/2 cup chopped walnuts, toasted

Prep: 10 minutes, Chill: 1 hour, Serves: 4

Stir together walnut or extra virgin olive oil, sherry vinegar, Dijon mustard, sugar and garlic salt in a large bowl. Trim ends from zucchini and thinly slice into bowl using a vegetable peeler. Add grape tomatoes and shallot; toss to coat. Sprinkle with chopped toasted walnuts and freshly ground pepper to taste. Serve within 1 hour.
