Shrimp and Fruit Kabobs

Shrimp and Fruit Kabobs
1/4 cup extra virgin olive oil
1 tbsp. lemon juice
2 tbsp. minced fresh herbs
2 cloves garlic, minced
2 peaches
2 plums
1 lb. large shrimp, peeled and deveined

Prep: 10 minutes, Cook: 6 minutes, Serves: 4 to 6

1. Whisk together extra virgin olive oil, lemon juice, minced fresh herbs and minced garlic in a small bowl. Set aside half the oil. 

2. Pit peaches and plums and cut into 1-inch cubes. Thread onto skewers alternately with shrimp.

3. Grill over medium-high heat for 3 minutes on each side or until shrimp is pink and cooked through, brushing with half the herb oil during grilling. Remove from grill and drizzle with remaining oil.
