Amaretto Cake with Fresh Berries

Amaretto Cake with Fresh Berries
3/4 cup butter, softened
1 cup sugar
1 (7- oz.) tube almond paste finely crumbled
4 eggs
3 tbsp. amaretto liqueur
1/2 cup flour
3/4 tsp. baking powder
1/4 tsp. salt
1 (12- oz.) container fresh raspberries
Powdered sugar

Prep: 15 minutes, Cook: 40 minutes, Makes: 10 servings

1. Preheat oven to 350°F and grease a 9-inch springform pan. Using an electric mixer, beat together butter, sugar and almond paste in a medium bowl until light and fluffy. Add eggs, one at a time, beating well after each addition.

2. Add liqueur and beat for 2 minutes to break up almond paste (batter will still be slightly lumpy). Stir in flour, baking powder and salt. Pour into prepared pan and smooth the top.

3. Bake for 40 minutes or until a toothpick inserted into the center comes out clean; let cool. Remove sides of pan and top cake with fresh berries. Sift powdered sugar lightly over the top.
