Stuffed French Toast

Stuffed French Toast
4 (1 -inch thick) slices French bread
2 tbsp. whipped cream cheese
2 tbsp. preserves or jam (any flavor)
2 eggs
1/2 cup milk
1 tbsp sugar
1 tbsp. butter
Powdered sugar

Prep: 10 minutes, Cook: 6 to 10 minutes, Serves: 4

1. Lay each slice of bread flat on a cutting board. With a small knife, make a "pocket" in each slice by cutting a small slit through the crust on one side of the bread. (This will hold the filling.)

2. In a small bowl, mix together the cream cheese and preserves. Spread about 1 tablespoon of this inside each bread pocket.

3. Beat together the eggs, milk and sugar with a fork in a shallow dish.

4. Dip each bread slice in the mixture, turning to coat both sides.

5. Melt the butter in a large skillet over medium heat. Place the bread in the skillet and cook for about 3 to 5 minutes on each side.

6. Sprinkle with powdered sugar.
