Grilled Pesto Chicken Sandwiches

Grilled Pesto Chicken Sandwiches
2 large boneless, skinless chicken breasts
8 (1/2 -inch thick) slices sourdough bread
2 tbsp. butter
1/2 cup Raley's Italian Blend Shredded Cheese
8 thin tomato slices
2 tbsp. pesto
Prep: 10 minutes, Cook: 10 minutes, Serves: 4

1. Rinse chicken breasts and pat dry. Cut each in half
horizontally to make 4 thin pieces. Grill or broil for 3 minutes per
side or until lightly charred and internal temperature reaches

2. Meanwhile, spread equal amounts of butter on one
side of each bread slice. Place buttered side down in a large
skillet and top each slice with equal amounts of cheese. Cook
over medium heat until cheese is melted and bread is golden
brown on the bottom.

3. Top half the slices with tomatoes and cooked chicken; spread
pesto over chicken and close sandwiches.

Makes 4 servings.
