Cajun Ham, Bean and  Green Skillet

Cajun Ham, Bean and Greens Skillet
1 tbsp. olive oil
2 cups 1/2-inch diced turkey ham
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 cup chopped fresh tomato
1 (15- oz) can Raley's Black Eye Peas, rinsed and drained
2 tsp. Cajun seasoning
2 cups coarsely chopped collard greens

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Heat oil in a large skillet over medium-high heat. Add ham and cook for about 3 minutes to lightly brown. Add chopped vegetables, black eye peas and seasoning; cook and stir for 5 minutes. Cover and cook over low heat for 5 minutes more.

2. Stir in collard greens and cook just until wilted.

I have made this recipe twice now and it is always a hit. Super simple and very fresh tasting. You'll want to add this to rotation especially if there is a lot of ham eaten in your house.
