Limoncello Granita

Limoncello Granita
2 1/2 cups water
2 cups sugar
1 1/2 cups lemon juice
1/3 cup limoncello ( lemon liqueur)
Lemon pieces
fresh mint sprigs
Prep time: 10 minutes
Chill time: 16 hours total

Heat water and sugar in a medium saucepan until sugar is dissolved. Remove from heat and let stand to cool slightly; stir in lemon juice and limoncello and chill. Pour into a 1-quart dish; cover and freeze for 8 hours. Scrape the top with a fork until mixture is slushy. Return to freezer for at least 4 more hours; scrape with a fork again until light and icy. Freeze for at least 4 hours again. Spoon into small dishes and garnish with a small piece of lemon and mint sprigs.

I LOVE this recipe! So cool and refreshing--it's the perfect ending for a summer meal when you don't want a heavy dessert, just something light and sweet. One note: Be sure to pour the mixture into a large flat dish rather than a smaller, deeper one. The mixture will freeze faster and it will be easier to rake with the fork.
