A Lighter Corn Casserole

A Lighter Corn Casserole
2 cups fresh, frozen or canned corn kernels
2 tbsp. butter, melted
2 egg whites
1/2 cup nonfat plain yogurt
1/2 cup nonfat sour cream
1 cup diced Monterey Jack cheese
1/2 cup cornmeal
1 (4- oz.) can diced green chiles
1/2 tsp. salt
1/2 lb. turkey breakfast sausage links, cooked and sliced

Prep: 15 minutes, Cook: 50 to 60 minutes, Serves: 6 to 8

1. Preheat oven to 350°F. Spray a 2-quart casserole dish with nonstick cooking spray.

2. Thaw corn if using frozen. Combine corn, butter and egg whites in a food processor or blender; pulse several times to lightly purée corn. Mix remaining ingredients except sausage and add to corn mixture, stirring well.

3. Pour into prepared dish and bake, uncovered, for 50 to 60 minutes or until a knife inserted in the center comes out clean. Place sausage on top of casserole after 20 minutes of baking.
