Italian Rice, Bean and Vegetable Salad

Italian Rice, Bean and Vegetable Salad
1 (7.4- oz.) cup Full Circle Organic Cooked Brown Rice
2 cups lightly packed baby arugula
1/2 cup Girard's White Balsamic Vinaigrette
1/4 cup minced red onion
1/4 cup Raley's Tri-Pepper Dice (in our Produce Dept.)
1 (15- oz.) can cannellini beans, rinsed and drained

Prep: 5 minutes, Cook: 1 minute, Chill: 20 minutes, Serves: 2

1. Microwave rice for 1 minute, then fluff with a fork.

2. Place in a medium bowl and stir in remaining ingredients. Cover and chill for 20 minutes.
