Crispy Baked Fish and Chips

Crispy Baked Fish and Chips
1½ cups panko breadcrumbs
3/4 cup finely shredded Londoner Cheese (in our Deli)
1 tsp. freshly ground sea salt
1 tsp. freshly ground pepper
3/4 tsp. dried dill
3 eggs beaten
1½ tbsp. spicy brown mustard
1/2 cup flour
1¼ lbs. cod fillets, cut into 3-inch long pieces
1 lb. russet potatoes, cut into 1/2-inch long strips
Olive oil cooking spray
Lemon wedges

Prep: 15 minutes, Cook: 40 to 45 minutes, Serves: 4

1. Preheat oven to 425°F and line 2 baking sheets with foil. Stir together breadcrumbs, cheese, salt, pepper and dill in a shallow dish. Place flour in another shallow dish. Beat together eggs and mustard in a third shallow dish.
2. Dip fish pieces into flour, then egg mixture, then breadcrumb mixture; place on a baking sheet. Repeat steps with potatoes and place in a single layer on second baking sheet.
3. Bake potatoes for 30 minutes, stirring and coating with cooking spray occasionally. Add fish to oven and cook for 15 minutes more or until it flakes easily with a fork. Serve immediately with lemon wedges.
