Grilled Crab And Avocado Quesadillas

Avocado Crab Quesadillas
4 burrito-size flour tortillas
1 (8- oz.) package shredded Mexican blend cheese
1⅓ cup flaked crab (real or imitation)
1/2 cup sliced green onions
1 Large firm but ripe avocado, peeled, pitted and thinly sliced
Chopped fresh cilantro (optional topper)
Salsa (optional topper)
Sour cream (optional topper)

Prep: 10 minutes, Cook: 20 minutes total, Serves: 4

1. Place tortillas on a flat surface. Sprinkle 1/4 cup of cheese on half of each tortilla. Top each with 1/3 cup crab, 2 tbsp. onions and 1/4 of the avocado slices. Sprinkle with 1/4 cup cheese and fold in half.  

2. Place each tortillas in a large skillet and cook for about 2 to 3 minutes on each side over medium heat, until golden brown and crisp.

3. Top with cilantro, salsa and sour cream, if you like.
